The Vikings' Matt Birk is negotiating to open a steakhouse in downtown St. Paul.

Expect a menu full of tasteful treats such as the 12-ounce "I Went to Harvard Sirloin" and the saucy "Did I Mention I'm an Ivy Leaguer Stew".

Birk makes play for restaurant

Vikings center, partners plan supper club revival at former Gallivan's location

Look out Carl Eller, there's another Minnesota Vikings player entering the restaurant business.

Pro Bowl center Matt Birk is in negotiations to open a supper club named Matty B's in the former Gallivan's in downtown St. Paul.

"We're hoping within the next week or so to finalize things," said Michael Colosimo, who is partnering with Birk and colleagues Mike Axtell and Hassan Abdel-Moneim, who have been food managers at several local hotels.

Randy Geller, spokesman for Victory Parking Inc., which owns the building, wouldn't confirm he was negotiating with Birk but said he is in final talks with a group looking to open a supper club. Geller added he liked the idea of using the space for what it has been known for — a piece of old St. Paul.

Before Gallivan's closed in June 2003, it had been a fixture on Wabasha Street for 40 years. Its replacement, Rockin' Lobster, lasted about a year before closing in February.

If everything goes as planned, Matty B's would open by spring. Birk's restaurant would come on the heels of the Purple People Eatery in Woodbury, which former Vikings defensive lineman Eller opened in October.

But unlike Eller's restaurant, which pays tribute to the Vikings glory days of the 1970s, Matty B's will raise its glass to the St. Paul steakhouse days.
"There will be no sports-theme feel whatsoever. We named it Matty B's because we wanted to catch that supper club spirit where the restaurant's named after the owner. We're not hinging it on getting people here because this is Matt Birk's restaurant," Colosimo said.

Still, the name could carry a lot of mileage. Birk has been a Pro Bowler four times, although he sat out this entire season because of a torn labrum in his left hip.

Colosimo said he and his partners knew two things while pursuing their restaurant venture more than a year ago: they wanted a supper club with moderately priced steaks and seafood, and comfort food such as meatloaf and burgers. They also wanted the restaurant to be in St. Paul.

Birk was born in St. Paul and raised in the Highland Park neighborhood. Colosimo, whose niece Adriana is married to Birk, was raised on the East Side and still lives in St. Paul, as does Abdel-Moneim.

"I grew up a few miles from Gallivan's and used to go there," Colosimo said. "As soon as we walked in and saw the dark wood and booths, we fell in love with the space."

Well that's cool! Hopefully that means he plans on sticking around for a while! I'll have to check that out next time I get out to Minny (AKA next century :sad:)

Those are my favorites too.

I grill a steak at least once a week, all year 'round.

Carl Eller is opening up a restaraunt 2 blocks from my house in Woodbury called the "Purple People Eatery" Can't wait for it to open up and eat there!!
